Give chicken salad a vibrant, fresh and flavorful, whole grain makeover.
- 8 slices Wholesome Harvest® 100% Stone Ground Whole Wheat Bread
- 4 cups shredded rotisserie chicken
- ¾ cup plain Greek yogurt
- 2 tbsp. freshly squeezed lemon juice
- 1 medium cucumber, julienned
- 8 cherry tomatoes, sliced in half
- ½ medium red onion, chopped
- 3 oz. Feta cheese crumbles
- ¼ cup Kalamata olives, sliced
- 2 tbsp. fresh dill, chopped
- Salt & pepper, to taste
1. In a large bowl, combine chicken, yogurt, lemon juice, cucumber, tomato halves, red onion, Feta, olives and dill. Mix well to combine. Season with salt and pepper, to taste, stirring to fully incorporate. Serve chicken salad between two slices of bread.
